Our installation interprets gourmandise - the pleasure of tasting - as a sequential, multi-sensory and sensual discovery: revelation (presentation of the dish), anticipation (eagerness to taste) and experience (tasting). Similarly, the courtyard is sequentially revealed by a glimpse from the outside that sparks the curiosity of passers-by, anticipated while wandering into it and fully experienced once inside.

Both experiences are also based on a dualism: the plate / the food, as well as the street facade / the courtyard facade. Inspired by this analogy, the installation’s sober exterior contrasts with an intriguing, tactile and sensory interior, inviting visitors to explore. Chaume Sublimé transforms an ordinary material – reedgrass - into a novel immersive experience.
